Im wondering how fast water sucks up heat? to get optimal heat transfer, also bong cooling, making a tall bong, with an outlet on the bottom, the weight of the watter would push thru all the tubing then a return water inlet at the top to bring back the water into the bong, does this work????? if so, how well?

Water picks up heat pretty fast. Some 30 times what air can do.

For a bong, you must use a water pump. Some have the pump inside the reservior in the bottom of the bong, some have it inside the computer. The wieght of the water would only push the flow if the showerhead were below the inlet/reservior, and only until the reservior was empty....then there's no more cooling water.

For best results, they use a waterpump that pumps 250 gallons per hour (900 liters) or better, using 12mm water lines.
