I noticed that in the BIOS of my EVGA nForce 780i SLI, the MCP temp was idling at 54c. Everything is at stock speeds and voltages. Should I be concerned?

no NV chipsets run hot by nature... it it was closers to 80c, then i would be worried.

thanks Evil
How about the GPU and VGA what should the temps be on those?

dunno about the gpu or cpu since that will depend on your ambient temps. if you run orthos to stress the cpu that will tell ya. as if your running stock on the stock intel cooler expect higher temps. then what we see on aftermarket coolers. if i do recall though i thought it was normal for the G80 with the double cooler to run around 80C underload. i know my wierd 7900GT KO back in the day they were having issues. would run near 80c, though that is a much smaller cooler.
