I am in the process of making final choices and ordering parts for my build and I've come to a dilemma now that the moment is here and I can't stand to keep waiting for the new nvidia stuff to launch. I plan to get the new ones if the benchmarks are good and justify the price ... SLI is a possibility depending on my funds. Right now though is where I'm looking with a slight reach into the future.

If you were me and you could afford to do like a 8800GTS right now (~$250) would you buy the 8800GTS and step-up to the new ones or buy cheaper and sell towards the new cards? I just don't want to drop a bunch of cash now when I plan to get the new ones but at the same time I don't want to not be able to play games because the temp card sucks.

My rig is looking like this:
Intel E8400/E3110 (got another thread on this dilemma)
Cooler Master Stacker 830 Evolution Black
EVGA 780i SLI A1 Motherboard
Corsair 4GB (2x2GB) DDR2-800 @ 4-4-4-12
Western Digital 640GB 7,200RPM
2x Samsung SATA DVD+/-RW with Lightscribe
Corsair 1000HX 1,000 Watt Modular PSU

Please help me out as I just need opinions from who I would consider professionals on this matter...

Well if you're planning to go the EVGA route, then yes, I'd buy the 8800GTS (G92) and step up within the 90-day window.
Although you might consider going with an SLi solution since you're buying an Nvidia based motherboard, which is really the only reason to buy an Nvidia based board IMO..

Very nice setup. In a few weeks, you can step up to a GTX 280, and down the road when another $600 falls into your pocket, the mobo and PSU will be up to the task of running 2 of them :)
