DFI DK X38: A few Bios settings?

So I'm OCing my CPU now, I don't know what a few of the BIOS settings do, mainly on the CPU tab, Thermal management control. Also I can't seem to turn off speedstep. I've found the menu item (EIST) but disabling apparently does nothing. MY CPU still drops to 6x multi. This actually isn't too much of an issue, but I'd still like to know what's the deal with it.

You can turn thermal management off. In addition to EIST, turn off C1E as well
