A little different mobo recomendation question (I think)

Just starting to build a new box, don't game but do rip audio and video.
Already have a so-so video and audio card, Zalman 9700, CM 690 with RPP 550, Corsair 6400 (2 gigs); and plan on getting either a Q6600 or E8400 and a couple of SATA drives.
I plan on OC'ing lightly just to learn.
Don't want to pay for in a mobo - SLI, Crossfire or Raid - won't use them.
Do want to pay for E-SATA and Firewire, since I am a backup freak and my box has the connections.
I have read a lot of the recommendations, but am having trouble fighting my way through the differences between IP35-E vs IP35 Pro, GA-EP35-DSR vs L vs P, P5B vs P5B Deluxe. And the mobo home pages don't seem to layout the differences very clearly.
