Would there be a problem running 4 DIMM sticks on a motherboard from two manufacturers like from Crucial and G.Skill?
Such as Crucial Ballistix DDR2-800 2x1GB with timings 4-4-4-12 and voltage 2.0v and GSkill DDR2-800 2x1GB with timings 5-5-5-15 and voltage 1.8-2.0v

You will still get dual-channel, if that's what you are asking (as long as you make the two channels "symmetrical" by putting one of each in each channel).
I am not sure about your board, but going from 2 sticks to 4 sticks lowered my P35's FSB limit by ~30mhz (500mhz to 470mhz).
And of course, you will have to run the sticks at the speed of the slowest.

I just want to make sure it will be compatible considering they use different timings and voltages

As long as you can find a set of config (frequency, timing, voltage) that works for all four sticks, you'll be fine.
For yours it would be something like 800mhz, 5-5-5-15, 2.0V
