so, how do they work?

my guess is that they have some material that changes it conductivity at diff. temps and then it converts it (like graphs we would on a graph or somthing)and prints out a temp it that it?

It measures the resitance in the wire. As the probe gets hotter, the resistance gets higher. It then corelates X resistance with Y Temp or something very similar to that.

Not to nit-pick, but in thermistors, unlike common resistors, the resistance actually goes down as the temperature goes up. The point is still the same. A device measures the change in resistance and interprets it to a corresponding temperature.
