When are the more mainstream chipset motherboards for Nehalem processors coming out? Is X58 going to be the only chipset for Bloomfield?

The only thing I heard about P55 is that it's coming out in Q3-4'09 and will be for the Lynnfield incarnation of Nehalem, which will use a different socket, dual-channel DDR3 and integrated PCI-E 2.0.

Is there anything coming out sooner or will Lynnfield be the best bet for the mainstream desktop user?

well here is something i found a while back, seems to be a really detialed list of sockets for both amd/intel.
