I don't know too much about GPUs and such, as I recently built my first gaming PC in over 5 years. So I am trying to educate myself as much as possible.

I bought an ATI Radeon HD4850 and did the fan tweak to my liking, and I can get it to idle around 55C at 30% fan speed, fairly silent.

What should my target be when I am gaming? What is the temperature after which you say that it's just "too hot to be safe"?

I am still in the testing phase for my games but if I put my fan at 40-45%, it's not terribly loud but it does start to get a bit annoying, with temperatures in the 70-80 range. Is this ok? What should my target be while gaming?

Also I checked on ATI's website for some suggested safe temperature ranges but couldn't find any :( Maybe i'm blind.

i think the safest for a 4850 is 100 or 110 degrees celsius....

I don't care what people say about the heat tolerances of these things, I never let mine get above 70C, and that's on hot days. To answer your question though, yes you'll be fine at that temp range. I would get it a little cooler if you can though. At that temp I'm guessing it's a reference card with the little useless cooler on it. I'd grab an Accelero S1 and up the clocks a little ;)

Yes, you are right. Everything is still stock, straight from ATI :) But I did have plans on hooking up a beefier fan on it. However I was looking at the Zalman vf1000 and I don't have a 3 pin male on my motherboard for the fan to plug in to. I don't even have a 4 pin molex slot on my mobo.

I do however have a 4 pin female molex coming straight out of my PSu. So I was wondering if I could get a 3 pin male to 4 pin male molex adapter somehow. Do these even exist? do I have other options?

EDIT: i have had a couple of looks at the accelero s1 and i think it would be too big to fit. my mobo is cramped.
