dual 7900GS's ey? considering the age of those cards, i'm sure they wouldn't take much power.
i've never heard of that brand, so i don't know much about it, but have you considered the Corsair HX-520? knowing their great products, you woudln't go wrong with them. and you get an extra 20 w compared to your FSP one :p
yeah Everest make ok PSU, sure it will be fine for your computer. i know that the 7900gs uses 45.1W at load so you should be fine for your 500W PSU
I personally wouldn't use that brand, unless a particular model gets a solid review. There is quite the stigma associated with FPS, I would stick with Corsair / Thermaltake etc.. for reasonable pricing / performance.
Suggested 520HX from Corsair would be perfect.

I actually ran my backup PSU, which was a 300watt FSP green, with my q6600 and water, as well as my 8800gts.

I'm not saying its awesome, but it did do the job till I got my main PSU back from RMA.

FSP use to make good PSU's but there is this review of the FSP Everst 700watt one (http://www.jonnyguru.com/modules.php?name=NDReviews&op=Story&reid=120), not good at all. i havent looked further but i think that is the first psu on JG to get 3 rating for its size.

For FSP I'll stop at Bluestorm II. Everest/Epsilon have problems at maximum load.
LE: You can switch on Zalman ZM500-HP (http://www.zalman.co.kr/ENG/product/Product_Read.asp?idx=195) which is an improved (http://www.jonnyguru.com/modules.php?name=NDReviews&op=Story&reid=30) FSP.

The hell with what you've heard:
FSP has been VERY good to me. I'm pulling WAY more power than you are with my Bluestorm.. (and the Bluestorm I isn't really even a full 500 watts. It's like 460 or something.)
Your power supply will be just fine.
