Celeron 300MHz is pretty good! :) Does 50% overclock pretty easily. But that wasn't the answer you were looking for, right?
The P3-700 is known to do well, and hit about a gig or above with air cooling.
Celeron 1200 tualatin is probably your best bet at the moment, reaching 1500 - 1600.
Some P4 OC pretty good as well.

for a 700e to hit 1ghz you would have to use 150mhz fsb :p dont think u can go higher than that.
the p3 1000e cD0 usually easily hit 1.33ghz. or you could go for the 1.2ghz tualiltan but in most cases that would require a new motherboard.

Sure, the 1 gig Celly is the cD0 stepping and is a fine overclocker. By the way BigRed, I'm typing this post on my P-III 700 running at 150 FSB and the CPU speed is 1050 MHz. To hit 1 gig with the P-III 700e you only need to use 143 FSB. Ok, so I'm being kind of picky and technical... :)
Here goes my two cents:
Celeron 850, 900 or 1000.
You should get 1000 if you can since they overclock to 133 average so you'd be either hitting that or getting past it with good cooling+airflow and obviously good compoents. 33% overclock
The 900 will do 1.2 on aver, which is fairly good 33% overclock.
The 850, sort of a gamble but mostly oc to 1.150 they aren't all cD0 steppings to my knowledge.
But for 900+1000 your guaranteed a cD0 stepping, which is the lastest revision and final revision which is the best for oveclocking.
If your getting a new motherboard as well then go for an Abit ST6 and a 1.2 Tualatin they hit 1.45 on average and hit 1.6 with a vidpin mod(voltage mod) with good cooling.
IMHO the Celeron are just like P3 when overclocked just that the P3 have the extra advantage since they have 256K cache or the new tualatin which has 512K or 256K but mainly people who buy it go for the 512K.

I had the best luck with a celeron 600mhz, didn't even have to change the core volt to achieve 900mhz.
For the newer chips Tualatin Celeron 1.2 seems to overclock nice and I've heard the 1.0 and 1.1's are supposed to do better. Also P3 1000E and 1100E will both hit 1300's and even 1400's in some cases.
Also Celeron 566 and 600 overclock nicely if on a budget

Errr, last time I checked, 7 x 143 = 1001...
143 Isn't impossible on a good mobo.
