What do you guys think? What would be the best setup for cooling a 4.5Ghz I7?

For a CPU only or CPU/NB loop, a good 320 rad, 355 or 655 pump, and GTZ would be fine. NB block would depend on the board.

Feser 480 if you have the money, will give you headroom for Vid Card later if you so choose. Fuzion V2 or GTZ w/ 655. Would also suggest a Swiftech Micro res to make things easy and a LARGE case to support it all. I have an Antec 300 and its so tight of a fit w/ 2 HDD's. Rad is even mounted on the back.

CPU/NB loop pretty much. I've never had a problem with Video card cooling via air.

Whats a good I7 mount?

The GTZ with the i7 mounting kit.

A triple rad would be fine.

What MB are you using? CPU blocks are your choice. All the main ones are with a couple C of eachother. I've seen more test on the Koolance 350 that shows it's still the leader of the pack for cooling but also leader of the pack for restrictiveness. The GTZ, EK Supreme, K350, and FuZion V2 are all the major players and you can't go wrong with any of them.
