I had some Crucial Ballistix DDR2 go bad, and I just replaced it with a 4GB G.Skill Pi DDR2 800 4-4-4-12 kit.

I was running my E2160 at 376MHz FSB with a 1.2X RAM multiplier. The new memory will not run at this speed ("DDR2 902") at the 4-4-4-12 timing, but runs at 5-5-5-15. However, preliminarily (didn't Prime95 it yet) it runs at 4-4-4-12 if I lower the FSB from 376 to 366.

Which of these will give the best performance?

Is there another setup I should try?
 
Measure both ways with Everest or another performance measuring program. Usually Intel processors work better with higher speed than with lower latency. Most 800 4-4-4 RAM will run 1066 5-5-5, but my understanding is that Pi Black doesn't like cas5 and won't go much over 1000 MHz. Let us know how high you can get.
