I have 4 GPU's in my computer (2x 3870x2's) and only 1 gpu is being used right now. is there a way to use more than one?

There is. Unfortunately, the guide in the sticky is written for Nvidia cards, but It should be enough to get you on your way. You may need dummy plugs or extra monitors to activate the extra desktops in Vista.

There are supposed to be some settings for the Catalyst drivers that helps you fold better, but someone from the ATI side of the street will need to step in on that.
