i have a bfg 285, and im wondering if i should redo the thermal paste? i have some shin etsu lying around...

What are your temps? I'm not sure about BFG's RMA policy but sometimes it will void the warranty if you replace/tamper with the HSF.

it gets up to like 80 c when i run furmark. but when i use a program to crank the fan up to 100% it helps it down to like 66.

i already used some for my cpu. will i have enough? doesnt the heatsink attach to more than just the GPU?

There are thermal pads on the memory/VR's etc.

I think those are okay temps. GPUs don't benefit too much from lower temps because temps generally don't limit overclocks.
If you are intent on switching out the TIM, all you'll have to apply to is the core. Youtube some GTX 285 water block installation videos and it'll show you how to remove the heatsink correctly.

They matter big time on this series of cards...especially the shader clocks. But the difference wont be found from 80C to 66C. Under water and a max load of 42C I could reach almost 100Mhz higher on teh shaders. ;)
