Now that I have both Quake and Q3A, how do I apply this Quake bench everyone's talking about?

It depends, do you have the newest point release installed?

If not, press ` to get to the console, and type

it says 1346 frames, 18.5 seconds: 72.8 fps
so I ran it a few times. basically it's right around 72.9 fps on this oem radeon 7200, quake set to 800x600, 32 bit, bilinear

What else can quake tell me about my vid cards, before I start changing things?

Well, I would run quake in something like 1200x1600 with highest details, and see what FPS the R7500 spits out. I would also run it in 640x480 with low details. That way you will have some good numbers to compare with when you have overclocked the vidcard.
