i know that wireless clients connect to a wireless AP and get an ip but is it possible for a laptop to connect to the AP but get an IP from a 2003 server?

im just trying to learn more about domains, active directory etc and need some computers connected

To run a domain, the 2003 server does not need to be the DHCP server.

Correct, but you'll need to make sure that the router is setting the correct parameters for the DNS server (which will be your 2003 server running AD and DNS), and the correct DNS suffix as well (which is set when you turn up AD).
