What is the best MB out there, that is an excellent overclocker?

The proc I have is a Intel Core 2 Duo E8400 Wolfdale 3.0GHz LGA 775 65W Dual-Core.

You'll want to look for a board with the P45 chipset. Like Gigabyte's EP45 and EP45T (DDR3) boards, or Asus' P5Q and P5Q3 (DDR3) boards.
 
P5Q-Pro/Deluxe clock very well. Earlier revisions could easily go above 500mhz FSB but later seemed to not like to go above 500mhz much.

Gigabytes were good as well, many used them. I never personally used a GB on the P45 platform other than a DS3L which was garbage but people loved the UD series.

More or less will come down to your chip in the end though whether it clocks well. Do you have E0 or C0 stepping?
 
I have allot of experience with E8400 and the bards are not that important. The E8400 has high multipliers. you can use P35-43-45 all those boards achieve good overclocks.

If you have a quad you need P45-X48

I would go with GIGABYTE GA-P43T-ES3G LGA 775 Intel P43 ATX Intel Motherboard it will OC a E8400 just fine with a 3 year warranty

My P5Q-E Asus board took an E8400 over 4GHz and was very very prime stable on the first shot. This was a zero effort three minute coarse OC and I didn't even go that high on FSB.

9x444 gets you 4Ghz and pretty much any P35/43/45 board will do that very easily.
