I have single sided 128mb sticks of rdram. one sided heat spreader.

Where should i stick the temperature probe.... on the pcb in the back, or the heat spreader in the front?

which side would give me a more accurate temp reading
 
I would have to say that if you could get it on the memory chip itself that would be the best.I think you will find that RDRAM,as long as your case is well vented doesnt have a heat problem.
