I currently have a 256 MB stick of PC2100. If I add a 512 stick of PC3000 RAM, will the PC2100 ram slow the PC3000 RAM down?

Yes. Your RAM speeds will only be as fast as your slowest stick, so it would be a waste of money.

BUT. 512 MB of memory is a lot, so you might want to consider using the 3000 stick and selling the 2100 stick on Ebay or something.
