I'm looking to cool 2 GTX 580's and a overclocked 2500k I want to know if 1 120.1 rad and a 240.1 rad would be sufficient? I think it should be fine but would like some opinions
 
My opinion: You have done nowhere near the required reading. Go read the sticky, there's too much info that you need to know for me to reasonably post.
 
There are specific stickies on how to calculate your heatload, you should at least get a general understanding of:

Heat load of your parts

Wattage dissipated by a standard 120x3 radiator for radiator comparisons

Know the difference between the classes of radiators

Know what fannage does or doesn't do on the wrong or right rad.

Yep, we can't tell you what you need because you don't know yourself yet.

As a hint, you want as a minimum 120x5 raddage with higher CFM fannage, or more raddage for less noise.
