Weird that it's 6GB and not 8 given you have 8GB RAM. In any case, disable it as mentioned above. I always disable it. Win7 hybrid sleep is good enough

Documents and Desktop folder can be redirected...

Documents and Desktop folder can be redirected using the Properties of the folder, you'll see a Location tab.

As for AppData, you may want to consider using an mklink command.

The other thing I've seen with corrupt files during install is due to bad ram. Have you checked the RAM to ensure it is not faulty or set up incorrectly?

What is the exact name of the setting you changed in the bios? UEFI is a replacement for the BIOS, how did you "enable" it? Your motherboard either uses it or it uses the old style BIOS.
