What exactly is the difference in ATA100 and UDMA100? Is there a difference or is this just 2 terms to describe the exact same speed?

There's a little difference between ATA and UDMA drives, the ATA drives have a (little) lower acces time, I've never heard there's a difference between MOBO's that support ATA or UDMA.

Doesn't really matter since most HDD's today have a access time of <9ms, But IMO I would buy either a Maxtor (9ms) or a IBM (8ms)(IBM is a little faster, and I've heard they're better for OCing).
If you want the fastest drive there is, then you should buy a Seagate ST318451LW the Specs are:
U160-SCSI 18.3 Gb, 4ms Access time, 4.096 cache (4Mb), 15.000 RPM!!!!.

BTW: There are some faster and slower drives made by both Maxtor and IBM out there, but my rule is:
7200 RPM, 2Mb cache, U-100 and at least 9ms access time.(not to be forgotten: as LARGE as I can afford).
