I have a quick question, are the Hitachi T7K250 that come in the 160GB flavor just as fast as the 250GB ones.

As I understand the bigger capacity HD's are faster than smaller ones.

all 7K series from Hitach are 7200rpm
the 250GB should be faster. It appears to use the same number of platters (2) as the 160gb, meaning areal density is higher on the 250GB. Plus it has an additional data head. How much faster, is dependent on the situation. I wouldn't expect it to be a difference like comparing the 160GB to a Raptor 74GB. A slight performance increase.
