If you've got software that can record from a microphone or line-in, you're set. If not, Audacity is a pretty good free recording/editing program.

To record from the system mixer instead of mic or line-in, you need to change the input used to the mixer. Open up the mixer (double click on the speaker in the tray, or worm your way through the control panel) and click Options->Properties. Select the Recording button, and make sure that "Stereo Mix" is checked. Click OK. At the bottom of each of the inputs, you'll notice a check box that says "Select". Check the one under Stereo Mix.

Once Stereo Mix is selected, any program recording will "hear" what is being played through the speakers.
