to expand on misfit's statement, you could change your run level so that the gui goes not run on startup. This would allow you to run X when you like, and if you wanted out of it, all you'd need is to log off, and drop you back into the terminal. ITs what I like for things like Fedora but does not work for Ubuntu, as Ubuntu's run levels are F'ed up./
 
or hit ctrl+alt+F1 (or any other F key) to drop to cli, then ctrl+alt+F7 to get back to X
