I assume after I OC I want to exercise the beast a little to watch the temps?

That would give me an immediate indication (rather than playing a game not knowing if the crash is a regular crash or the OC).

What do I want to top the Pentium D 820 out at temperature wise and what can you suggest for a CPU load simulator?

Orthos is good. Most people use it.

People use to use Prime 95 and run multiple isntances, then Orthos came out. its basically prime95 with some aditional test, but its already multithreaded. It auto detects # of cores.

Unless I'm misunderstanding TDP, you will want to keep the processor below 61deg C.
