What would an E6400 be good for?

Now that I finally have my new mobo courtesy of NinjaZX6R, I have my E6400 back up and running. I am installing Ubuntu 8.04 on it as I write this and I was wondering which would be more beneficial for this mobo and CPU combo. Here it goes....

CPU: Core2Duo E6400 (at stock currently since I just put it together)
Mobo: Foxconn 975X7AB
Ram: 1x 1 gig Crucial Ballistix DDR2 1066
GPU: Powercolor X1900XT
OS: Ubuntu Linux 8.04

My question....
Would this system be better off running SMP or 1 GPU based + 1 CPU based core? Which would be more beneficial even with a mild OC on the CPU, lets say at least 2.6ghz?

I used to have it at around 3.2 for 24/7 use and gaming however I currently have a stock Intel cooler on it and have an older PSU on it at the moment.
The PSU is missing the 2nd 4pin mobo power connector. So I don't know how far I can push this thing. And holy bat poop, I am even more confused after reading that post.
