I am running an 8800GT and an HD monitor with an HDMI cable between the two. When I run an HD version of a movie it still looks pretty grainy like a normal def movie. I looked up the specs on the 8800gt and the site said it is HD ready. Is there a setting I am missing that will run it HD or what?

It is HD versions of movies on itunes running either through itunes or discs running through vlc player

Most commercial HD content is HDCP. Some players, such as VLC, may play back the content in low-def. Most 8800GT cards are HDCP, but to play back HDCP content in high def, you'll need a HDCP monitor, a HDCP-compatible player, such as Cyberlink's PowerDVD and a blu-ray optical drive (if you're attempting to play back a blu-ray disk).
