I always go for the best bang for your buck so I'm wondering if the second upgrade option is worth the $266 extra or not... I'm thinking no. I probably wont upgrade for a while after this...

You can see what I'm currently running in my signature:
i7-960, Asus R3E, 6GB DDR3 2000, Dual ATI 6870's and a Corsair Force GT SSD

Thinking about:

Intel Core i7-2600K Sandy Bridge 3.4GHz (3.8GHz Turbo Boost) LGA 1155 $329.99
ASUS MAXIMUS IV EXTREME (REV 3.0) LGA 1155 Intel P67 $289.99
CORSAIR DOMINATOR GT 8GB (2 x 4GB) DDR3 2133 $169.99
Shipping & Handling $8.95

Total $798.92

or

Intel Core i7-3930K Sandy Bridge-E 3.2GHz (3.8GHz Turbo) LGA 2011 $599.99
ASUS P9X79 DELUXE LGA 2011 Intel X79 $369.99
G.SKILL Ripjaws Z Series 8GB (4 x 2GB) DDR3 2133 $94.99
SHipping & Handling $0

Total $1,064.97

Difference $266.05

Bang for your buck = 2600k...but that mobo is overkill by a mile for non benchers. SB doesnt depend tge board at all really. Same with 2133mhz ram... Unless u bench, no point.

I bench occasionally, just looking for a solid over clocker (because you can be sure I'll be pushing it hard) with a lot of flexiblity on the mainboard and a good BIOS... a lot of times you lose some of that with the cheaper boards.

Edit: Since I run cross fire I kinda like the cut of the ASUS P8P67 WS REVOLUTION and I'm going with different RAM too. Dropped my cost down quite a bit... $664.22 so now its more like $400 diff so I think I'll go 2600K :)
