Advice on Multip GPU SLI and multi monitor setup geared towards running Project

Hi All

I am in the process of planning a new PC build:

This is mostly going to be for work but I also want to be able to run Project Cars on it.

I am planning on having a central widescreen monitor in portrait mode and a 4:3 monitor either side in landscape mode - great for development but hopefully good for racing games as well!

I want to be able to run project cars on all 3 monitors.

It seems that my options are:

buy one monster video card that would run all 3 screens.
buy two cheaper video cards and link over SLI (would all the screens plug into the one video card?)
buy 3 cards and have them each run one monitor.

I've never built a system with more than one GPU so I'm a bit lost.

Does anyone have any advice?

The card I have picked is basically the cheapest with 4GB of Ram. If I get 2 does that extra memory still benefit me? Is it better to go for a better model with less memory?

Resolutions should be 1600*1200 for the 2 4:3 screens and 1080*1920 for the central screen.

You need three identical monitors for Nvidia surround.

You'll also want a GPU a LOT stronger than a 760 for this...
