Wife wants a new computer so I figured I would give her mine and build a new one. I'm not sure the new one will be that much faster. My budget is $2k and I want 3 monitors this time, so ~$1400 for the computer.

I don't see a point in 32gb ram... 16 is future proofing already. Unless you know you are close to breaking 16gb already. I wouldn't go more than that.

I feel you'll be much happier with those Dell monitors. They're better panels and the bezel is smaller than the AOC.
If you can swing it, go for the S2715H instead, the bezel is MUCH smaller than either the AOC or E2715H.
 
I've seen 12gb in use before, with 32gb I would feel safe about not topping out. I may never break 16gb with this build, but I know I would not with 32gb.
 
Ok, you talked me into 16gb for now, and I went with 3 of the current monitor I have now. Slimmer than the one I had picked and the right price. I had to switch the cpu cooler because part picker said it wasnt compatible with my case. Keeping my case, wife will pick what she wants. Downgraded back to the 250gb ssd since I have a couple 3tb drives that most games and videos sit on. Thanks for the help so far, havent ordered anything yet.

That'll be solid for you :)
Those Acer screens should be much better than the AOC ones. They're VA instead of TN so they'll look better and have a better viewing angle.
