Looking to doublecheck my part picks (first build since 2003, budget ~600$)

I think you will wish you would have gotten 16 gb of RAM instead of 8 given the intended use.
And the PSU is a good brand but on that brand's bottom shelf. But I realize you are on a budget.
Your dual band wifi adapter is not ac so it will not have "beam forming" technology. You may be very disappointed in the 5 ghz performance because of that and will probably find yourself using the 2.4 ghz band anyway. Have you considered going with a USB Wifi dongle instead. They work great. I use them all the time. You could save a few bucks there and put it somewhere else, like a better PSU or more RAM.
