I will be running three older video cards.. 9600GT, GTX 480, GTX 580.

Not playing games.. Doing Video editing with 6 monitors. the software I use takes advantage of CUDA. I have a Corsair 650 Now. Would a 1000 watt be enough?
 
Easily. 580 is ~250w, 480 is ~300w (one of the few cards that meets or exceeds its TDP), I think the 9600gt is 100w or so. Figure 100-120 for your CPU, 50 for everything else.

PSU wise I have no clue what the current hotness is nor what is on sale, but the Antec HCP-1000 and the be quiet! Dark Power Pro PSUs are my all time favorites, with anything Seasonic-X close behind. The Tachyon 1000w is nice too and generally pretty cheap.
Enermax's Platimax series is pretty impressive as well.

Naturally my favorites are generally hideously expensive.
