What is the best way to extract a picture of a person with hair going everywhere? I use the extract tool most of the time, but sometimes its just not good enough. It cuts the hair off etc.

Anyone got any suggestions to make the job easier?

I have also tried manually airbrushing it out (takes too long....).
 
Try to bring up the contrast to separate the image from the background and perhaps make it easier to pluck it out intact. You could re-adjust the image contrast later.
 
Ok, i'll give that a go. The image I'm working on has brown hair on black background....
I tried adjusting colour and contrast/brightness but found that I could not restore the colour later.

I'll try your suggestion of only doing the contrast.

You could try using the magic wand tool. Hmmm...
