A stepping is a revision of a CPU. As more CPU's get made, Intel (or AMD) find better, more efficent ways to make them, and the stepping signifies these changes. The "SL6RZ" is the step code. This is what Intel has to say about that stepping through their stepping finder. It generally indicates bus speed, stepping (C1), and it can tell you if the chip is a retail box or OEM chip. So the actual stepping is part of the step code.
