What are these ES chips all about? I have read a couple of crypric references to them.

As Bobby said, ES means Engineering Sample. Some Intel Engineering Samples come unlocked, but to get one you would have to work at Intel (or know someone who does) as they are considered Intel property for 3 years I believe. It is possible to find them for sale, but selling them without the permission of Intel is considered illegal.
 
i heard you should just drop the multiplier and ram the fsb through the roof with them but they are first gen silicon like pip said so they generally have faults in them like pip said so you generally don't want them.
 
only thing i would use a ES chip is for is testing the limits of FSB other then that its nothign special
