I want to switch over to an AMD Mobile. Which motherboard options do I have and which CPU is better in terms of O/C?

XP2400/2500/2600M?

nForce2 chipset. Abit, DFI and Soltek perform better than others. Consider extra features they have vs. what you need vs. current prices and sales... If $ is no object then Abit or DFI.
