Is there any possible way to cut off the power connectors that aren't being used on your PSU? An example would be the SATA power cable ...all it does is get crammed up above my PSU with a bunch of other cables that im not using....

so is it possible to cut them and just put a crimp over the "stubs" so they don't touch and short. It just seems like a waste of airspace and they look ugly being all tangled up there
 
It's possible. What I'd recommend you do is maybe think about making them "modular". So you can reconnect them easily if you need to use them.
