running games in a windowed format

Okay so you know how when you open up word, or IE it give you the blue bar at the top with the "X" and the "-" and all that good stuff, along with file and edit and all?
Okay I was woundering if there was a way to run games in a "windowed" format like that. See if I can run it like that then I can get use of dual screens during games, just drag the box outward. Unreal turnament let me do it, but they have a nice little check box. Of course though this is only practicle for RTS games I was woundering if there is anyways to do this if the game doesn't offer the option?

so just since my post is long and boring, how do you run a game in a "windowed" format like all other programs do, letting you see your taskbar and all that?
