This looks like a first rate rig. I can knit-pick a few choices, but they just come down to personal preference. I'd take a Wester Digital over a Maxtor and I'd go for a Delta 3 blade 120mm fan. Lastly, you are probably under pricing the Venice, but hey your guess is as good as mine. Good luck with it.

Try that fan instead ...... its really silent at about 2500 rpm and my xp120 loves it :) .
If ur getting another 6800 ultra in the near future to run it in SLI then i suggest getting a stronger PSU than the 520 W ( read 600W OCZ Powerstream ) . That particular model ( 520 W ) is known to balk under or hinder overclocks with twin 6800 GT+ cards.
If not then I recommend the DFI NF4 UT Ultra board instead ( same parts except non SLI ) .
As for the Venice cpu , why not get the 3500+ Venice instead . That would do you more justice when overclocking . 11x or 10x multi would be a better choice than the one 3800+ would have ( unless u want the larger cache but idk whether it will have a 1mb cache or not ). Put the money you save on Venice 3500+ in getting the Gskill LE ram instead or the new OCZ PC5000 ram. LEs are known to overclock higher with tighter timings than LCs.
And for the price of your video card , you can get a retail version of x850xt. Why not get that instead ? ( I really not know if you prefer Nvidia or want to stay future proof incase of SLI , but if not then X850Xt would definitely be a better choice ) .

BTW kick *** selection on the other parts. Ohh yea and I second rseven on the WD over maxtor . Maxtor drives just dont cut it anymore. And I think WD has a better warranty as well .
 
2 things on the GSKILL get the LE it clocks alot better and ditch the 6800 and grab a X850 XT it will give better scores for sure
