SLI question, would it be limited by monitor res??

I am thinking of jumping back to Nv again for an X800Pro<XT. I am looking at the 7800GT as it seems to be the most bang for the $$$ and the GTX not worth the extra $$$. It means a new m/b to make the jump and I am torn between whether to get an SLI-ready board and add another 7800 later on. My questions is since I am limited to a monitor res of 1280 x 1024 x 32 by my LCD, would it ba a waste to go to SLI since a 7800GT will run anything and everything out now at my max res with maxed settings.
Since there is a $60 difference in the cost of the 2 m/b's, not to mention if my Bluestorm would handle 2 x 7800's, I want to be smart about my choice.
