iPod transfering files?

So I am thinking of getting the 5th gen video ipod. I was going to install the rockbox firmware. Can I load files just by dumping them into folders on the harddrive from windows explorer or do I have to use the iTunes interface?

i use a program called anapod. it lets you take files off the ipod aswell as put them on.
