XP 32bit Support 8 Cores?

What XP supportis up to 2 sockets. So however many cores you have (well, to a degree), it should support, as long as you have no more than 2 sockets. However, I would recomend 2003 to take advantage of those cores.
 
Yes, I think if you're going to run up to 8 cores, that windows server would be a better choice for smoothness, stability, and performance. I think that XP will *support* it, but how well the cores are all used is up for debate.

Also XP home will only support 1 CPU and XP Professional will support 2 actual processors as far as I know.
