First I am new to OC. The MB I am using states the FSB can be set from 120 to 333 Mhz. The CPU is a E8400. Question is the FSB as listed in BIOS set by the MB? In my case I was able to increase the FSB to 350 but above that the MB will not accept a higher number no matter what is entered.

I dont know what other options that BIOS lets you change or if it's any good for OC'ing. Can you post BIOS screenshot So we could take a look. Because based from what you posted you sound very limited
 
shuttle has more then likly removed/limited the amount of ocing on there boards. if its one of those shuttle box pc's with mobo already in it? then i would say you need to look at another motherboard for ocing...
