I have a bunch of hard drives of different sizes, 250gb to 2TB, and looking at making a network accessible storage using an old PC I have.
What are my options / recommendations?

I'm not well versed in Linux so not sure I want to go with linux based "free NAS" applications.

Goal is to somehow combine all the drives into 1 or 2 volumes and also have the ability to have some of the data automatically backed up / duplicated.

Boris.

If you want them to be seen as a single drive and don't mind paying a little bit for the software, UnRAID is pretty good. Otherwise, managing different sized drives is going to become a nightmare quickly.
