Combination fileserver and email server

I really want to make a single server that will be both a file server and a email server. I would like it to support all of the big 3 OS's (OSX, Vista/Windows7, and ubuntu) if possible.
I know how to set up a linux file server, but how do I install it as an email server. I really don't know the basics of making an email server, if anyone knows a guide could you point it out.
