How can I manually set the core voltage on the AOpen AX6BC?
You can't.

It is possible to solder dip switches (4 I think) to the board and trick the voltage circuit. (It senses the desired voltage from the cpu) I have seen this mod on the web somewhere. It did not seem very hard to do but involved considerable soldering to the board and isolation of few cpu pins aswell.
