CPU core counts vs GPU core counts

I was looking at some GPU's and I'm seeing core counts of over 2000 on some of these. Now why can't they get more than 2000 cores in a CPU? Intel or AMD?
1 Nvidia card I was looking at had 2818 cores, just think of what a CPU with that many cores could do for F@H :) 1 CPU and 1 GPU with same core count and you could see 1000k PPD.
 
CPU's are computing in a serial environment with a low number of fast cores, GPU's are computing in a parallel environment with a large number of slow cores.
 
I love OC. I learn more in a week here than I would in a year shooting at random with Google. What I learn here is which questions are important.
