i was wondering if there was anyway to make a program not show up on the cpu graph

for example folding or seit

is there anyway to give them the same status as system idle procses

so that everything else shows up on the graph just not that one program

Post in the respective place for the DC app you're trying to hide and you might get a better answer. But in general, I don't think it's possible.
